Tamale Pie

Ingredients
  • 1 can kidney beans
  • 1 can pinto beans
  • 1 pound corn
  • 2 diced green bell peppers
  • 1/2 cup sliced black olives
  • 2 cups tomato juice
  • 2 table spoons tomato paste
  • 1 table spoon cumin
  • 1 table spoon chili powder
  • 1 table spoon oregano
  • 1.5 cups corn meal
  • 2.5 cups water
  • 4 eggs
  • 1 teaspoon salt

Procedure
  • Combine tomato juice, paste, cumin, chili powder and oregano.
  • Pour over the beans, corn peppers, and onions.
  • Place in a buttered baking dish.
  • In a large pot, combine the water and the corn meal.
  • Stir over medium heat until it thickens.
  • Remove from heat and add salt and egss.
  • Still well and spread over the top of bean mixture.
  • Cover pan with plastic foil
  • Bake for 60 minutes at 350 degrees.
  • Remove cover and back for another 10 minutes.
