Asian Shrimp and Asparagus Soup

Ingredients
  • 1 tbls Vegetable Oil
  • 2 tbls Minced Shallots
  • 6 cups Seafood Stock
  • 1 each Bouquet Garni (stems of cilantro, bay leaf, garlic clove, peppercorns...wrapped in a cheesecloth or use a coffee filter tied shut with twine)
  • 1 lb Asparagus, peeled, trimmed, & cut into 1/2 inch rounds

  • 1 lb Shrimp, peeled & devained, cut into 1/2 inch pieces

  • 1 cup fresh enoki mushrooms or domestic mushrooms, sliced

  • 3 tbls Fresh Lime Juice

  • 1/2 cup (packed) Cilantro Leaves, coarsley chopped

  • Kosher Salt as needed

  • Cracked Black Pepper as needed

  • Crushed Red Pepper Flakes (optional)
