Salmon With
Roasted Red Pepper Coulis

Preparation: Place large saute pan on the stove at high heat. Pour just enough oil in the pan to coat the bottom evenly. Heat pan until it is smoking hot. Pour Cajun Seasoning onto a plate, and press one side of each Salmon into the seasoning. Sear seasoned side of Salmon in hot pan for about one minute. Place Salmon in a shallow baking dish, seared side up, and place in oven at 300 degrees. While Salmon is finishing in the oven, make the sauce. Start by placing garlic, roasted red pepper, salt, pepper, parsley, and white vinegar in a food processor, or blender and blend on high. When all ingredients are completely pureed, slowly drizzle oil into mixture while machine is still running. Keep adding oil until it reaches the consistency desired. When Salmon is finished, place on a plate, and spoon coulis over each piece. |
