Grilled Italian Chicken Supreme Roll-Up with Tomato-Basil Compote

Ingredients:
  • 4 - 4oz.chicken breast
  • 1/2 lb. thinly sliced salami, ham, and provolone cheese

Compote Ingredients:

  • 2 tablespoons extra virgin olive oil
  • 6 tablespoons balsamic vinegar
  • 4 whole tomatoes (diced)
  • 1 teaspoon honey
  • 1cup thinly sliced fresh basil
  • 1/4 cup parmesan cheese
  • 3 tablespoons fresh lemon juice
  • Combine all ingredients into a mixing bowl.

Preparation:
  • Grill chicken breast and let cool.
  • Cut into strips-approx. four per breast.
  • Grill salami and ham.
  • In a fry  pan, put chicken, salami,   ham, and the provolone cheese, and let melt.
  • Unfold wrap bread.
  • Lay the mixture over the bread.
  • Top with the tomato basil compote.
  • Wrap roll jelly-roll fashion (fold the side part first-then procede to wrap the length side to serve).
  • Cut wraps in half.
  • Makes 4 sandwiches.
