Tortilla Soup

Ingredients:
  • 1/2 lb lean ground beef
  • 1/4 cup each chopped onions and peppers
  • 1 and 3/4 cups of water
  • 1 16oz can chopped stewed tomatoes
  • 1 16oz can pinto beans
  • 2 cups tomato sauce
  • A pinch each of cumin, chili powder, cayanne pepper, salt and white pepper.
  • Crushed corn chips
  • Sour cream and shredded cheddar cheese for garnish

Preparation:
  • In a large sauce pan cook the beef, onions and peppers until the beef is browned.
  • Add water, tomatoes, beans, and tomato sauce and all seasonings.
  • Cover and simmer over medium heat/low heat for 30 min.
  • Add corn chips at the end so they will be crunchy
  • Garnish with sour cream and cheddar cheese.
