Fresh Gazpacho

Ingredients:
  • 2 Cups Tomatoes -- chopped
  • 1/4 Cup Red Onion -- chopped
  • 1 Cup Cucumber -- peeled and chopped
  • 1 Clove Garlic -- halved
  • 1/2 Cup Green Pepper -- chopped
  • 1 1/2 Cups Tomato Juice or Vegetable Juice
  • 1/2 Cup Bell Pepper -- minced
  • 1/4 Cup Red Onion -- minced
  • 1 Cup Cucumber -- peel
  • 1 1/2 Cups Filtered Water
  • 1 Teaspoon Basil or Dill
  • 1/4 Cup Green Onions -- minced (garnish)
  • 1 Dash Cayenne or Paprika

Preparation:
  • Put first 5 ingredients into a food processor and puree.
  • Transfer to a large bowl.
  • Stir in remaining ingredients and chill for several hours before serving.
